At the Skye Food & Drink Festival, we like to show-off the exceptional talents of our artisan producers.

The Hebridean Mustard Company on the Isle of Harris produces Mustheb: a small batch range of hand-crafted artisan mustards flavoured with spices from across the globe as well as fresh locally-sourced ingredients.

And those clever people at the Hebridean Mustard Company are full of delicious ideas for great summer food. When good barbecue weather brings everyone outdoors, Mustheb mustards spice-up summer, revitalising those favourite al fresco recipes by delivering a unique and irresistible flavour to any dish. Here is a recipe straight from the Mustheb kitchen.

Summery Chickpea Salad

Here is a favourite summer recipe with Mustheb’s Taste of India mustard. The chickpeas soak up the curry flavours and the tangy lemon peel and juice rounds the overall flavour of the salad.

For the salad

  • 1 stalk celery
  • 2 spring onions
  • 2 handfuls of lettuce, mixed salads, rocket at your choice
  • 1 handful of yellow-coloured fruit of your choice (eg mango, apricot, nectarines), fresh is best, but the tinned varieties work also. If you choose tinned, put a glug of the liquid in the dressing)
  • 1 cup cooked chickpeas, drained and rinsed
  • 1/4 cup crumbled feta
  • 2 boiled eggs

For the mustard vinaigrette mix together

  • 1 tsp Mustheb Taste of India mustard
  • 1 tsp clear honey
  • Peel and juice of one organic lemon
  • 3 tbsp. extra virgin olive oil
  • Salt & pepper to taste

Mix sliced celery, spring onions, chopped fruit with chickpeas and the dressing, place bite-sized pieces of salad into a bowl, sprinkle with cheese. Garnish with egg halves.

Top Tip No. 1 for an additional bit of texture: fry some of the chickpeas in a couple teaspoons of olive oil, stir frequently until golden and crispy and start popping. Sprinkle with freshly ground Mustheb’s mustard salt.

Top Tip No. 2: Mustard and alfalfa sprout for a healthy vitamin booster
